This velvety, creamy soup is rich in flavor and packed with vitamins and nutrients. Made with wholesome pumpkin, warming spices like cinnamon and nutmeg, and a hint of garlic, each spoonful is a comforting mix of sweetness and savory goodness. High in fiber, antioxidants, and beta-carotene, this pumpkin soup not only delights your taste buds but also supports your immune system and overall wellness.

Ingredients:
- 1 tablespoon olive oil or butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups pumpkin puree (homemade or canned)
- 4 cups vegetable or chicken broth
- 1 cup heavy cream or coconut milk (for a dairy-free option)
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Salt and pepper to taste
- Optional toppings: toasted pumpkin seeds, a drizzle of cream, fresh herbs (like parsley or chives)
Instructions:
1. Sauté the Aromatics:
- In a large pot, heat the olive oil or butter over medium heat.
- Add the chopped onion and sauté until soft and translucent, about 5-7 minutes.
- Add the minced garlic and cook for another minute until fragrant.
2. Add the Pumpkin and Broth:
- Stir in the pumpkin puree and mix well with the onions and garlic.
- Pour in the vegetable or chicken broth and bring the mixture to a simmer.
3. Season the Soup:
- Add the ground cinnamon, ground nutmeg, salt, and pepper. Stir to combine.
4. Simmer:
- Let the soup simmer on low heat for about 15-20 minutes to allow the flavors to meld together.
5. Blend the Soup:
- Use an immersion blender to puree the soup until smooth. Alternatively, you can carefully transfer the soup in batches to a blender and blend until smooth. Be cautious with hot liquids.
6. Add Cream:
- Stir in the heavy cream or coconut milk, and continue to heat the soup until warmed through, but not boiling.
7. Adjust Seasoning:
- Taste and adjust the seasoning with more salt, pepper, or spices if needed.
8. Serve:
- Ladle the creamy pumpkin soup into bowls and top with your choice of toppings such as toasted pumpkin seeds, a drizzle of cream, or fresh herbs.
9. Enjoy!
- Serve the soup with crusty bread or a side salad for a complete meal.
