Ingredients:
- 4 medium apples (Granny Smith or Honeycrisp work well)
- 1 tablespoon lemon juice
- 1/4 cup honey or maple syrup
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon vanilla extract
- 1/2 cup rolled oats
- 1/4 cup almond flour or whole wheat flour
- 1/4 cup chopped nuts (walnuts, pecans, or almonds)
- 2 tablespoons coconut oil or unsalted butter, melted
- A pinch of salt
Instructions:
1. Preheat the Oven: Preheat your oven to 350°F (175°C).
2. Prepare the Apples: Peel, core, and slice the apples into thin wedges. Place them in a large mixing bowl and toss with lemon juice, 2 tablespoons of the honey or maple syrup, cinnamon, nutmeg, and vanilla extract.
3. Make the Topping: In a separate bowl, combine the rolled oats, almond flour (or whole wheat flour), chopped nuts, and salt. Stir in the melted coconut oil or butter and the remaining 2 tablespoons of honey or maple syrup until the mixture is well combined and crumbly.
4. Assemble the Crisp: Spread the apple mixture evenly in a baking dish (an 8x8 inch dish works well). Sprinkle the oat and nut topping evenly over the apples.
5. Bake: Place the dish in the preheated oven and bake for 35-40 minutes, or until the apples are tender and the topping is golden brown and crisp.
6. Serve: Let the apple crisp cool for a few minutes before serving. It’s delicious on its own or with a dollop of Greek yogurt or a small scoop of vanilla ice cream.
